Get 3 of your 5 a day the Filipino way with a traditional Pinakbet. Often found in a spread at fiestas and gatherings, it’s arguably the most famous vegetable-based meal in Pinoy cuisine. It typically includes kalabasa, ampalaya, tomatoes, and okra. Whatever the combination of veggies, they’re always mixed with bagoong and topped with crispy pork belly.

- 1/4 lb Kalabasa (Squash) – seeds removed and cubed
- 1/4 lb Ampalaya (Bittermelon) – seeds removed and cubed, salted to lessen bitterness
- 1/4 lb Long beans – cut to 2 inch lengths
- 1/4 lb Okra – cut to 2 inch lengths
- 1/4 lb Eggplant – cut to 2 inch lengths
- 1 tbsp Ginger – Julienned
- 1 small Onion – quartered
- 2 medium Tomatoes – quartered
- 2 tbsp Bagoong (Shrimp paste) – or to taste
- 1/2 lb Crispy pork belly – sliced
- In a hot pan, add oil.
- Add ginger and saute.
- Add onions, bagoong, and tomatoes. Cook until they soften.
- Add all the remaining vegetables. Simmer until tender.
- Top with crispy pork belly.
